Simple Banana Muffins
The Banana Situation
I have a weakness. Not for chocolate or cheese—though those are close runners-up—but for a good produce sale. So, when bananas were marked something ridiculous (five pounds for $2.50), you better believe I walked out of the store with a sack of yellow optimism slung over my shoulder like a victorious jungle explorer.
Now, I had the best intentions. Smoothies! Cereal toppers! Healthy snacks! But even with the best-laid plans, there are only so many bananas one person (or two) can eat before they start to resemble sad, brown-spotted reminders of good intentions.
That’s when the Small Batch Banana Muffins came to the rescue.
These muffins are perfect for those three or four bananas that sneak past their prime. And when I say “perfect,” I mean moist, fluffy, warm-out-of-the-oven comfort. I doubled the original recipe to make 12 muffins, because let’s be real—I had a lot of bananas and not enough freezer space.
🥣 Small Batch Banana Muffins (Double Batch – Makes 12 Muffins)

Ingredients:

1 cup sugar (I used Brown Sugar)

4 overripe bananas (divided)

12 tablespoons salted butter (melted) - (I used 6 oz Vegetable Oil)

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

2 teaspoons baking soda

½ teaspoon salt
Instructions:

Preheat oven to 350°F (177°C). Grease or line your muffin tin.

In a large bowl, beat the sugar and two bananas until smooth and blended.

Add melted butter/oil, eggs, and vanilla. Mix well.

Stir in flour, baking soda, and salt until just combined (don’t overmix—it’s okay if it’s a little lumpy).

Mash the remaining two bananas separately, then fold into the batter.

Scoop the batter into muffin cups, filling them about ¾ full.

Bake 20–25 minutes, or until a toothpick inserted into the center comes out clean.
Tips:

Use ripe bananas (think heavily speckled or nearly black—don’t be scared).

Silicone muffin tins may hold slightly less batter than metal ones. You might have enough leftover for an extra mini loaf or a few bonus muffins.

Check on them a few minutes early if your oven runs hot!

Bananas may be cheap, but banana muffins are priceless. Next time you find yourself with a mountain of fruit and a ticking ripeness clock, don’t panic—preheat your oven.
